Meatloaf Cupcakes by Mrs. Beaz

1 1/2 pounds ground beef, extra lean
1/3 cup ketchup
1 cup bread crumbs
1/2 tablespoon mustard
1 tablespoon Worcestershire sauce
1 1/2 tablespoons Beazell's Cajun Seasoning
1/2 tablespoon granulated garlic
1/3 tablespoon onion powder
2 large eggs
Cooking spray
Optional - 1/3 cup ketchup (to brush onto each meatloaf before cooking)

Mashed Potatoes:
4 cups cubed & peeled potatoes (about 2 pounds)
1/2 - 1/3 cup milk
4 tablespoons butter
1/2 teaspoon salt

3 tablespoons chopped chives
4 pieces of bacon, cooked and crumbled

Preheat oven to 350 degrees F.

In a large bowl combine ground meat, ketchup, bread crumbs, mustard, Worcestershire sauce, Beazell's Cajun Seasoning, garlic, onion powder and eggs.

Spoon the meat mixture into 12 muffin cups coated with cooking spray. Optional - brush ketchup onto each meatloaf. Bake for 25 minutes or until a thermometer registers 160 degrees F. Allow to cool for 5 minutes.

After the meatloaf is in the oven, you can make the mashed potatoes. Place potatoes in a pot; cover with water. Bring to a boil; reduce heat, and simmer 10 minutes or until tender. Drain. Pour drained potatoes into a bowl. Add milk and butter; mash the potatoes. Use a handmixer to get them nice and whipped. They need to be somewhat stiff to pipe onto the tops of the "cupcakes."

Put the potatoes into a pastry bag and pipe the mashed potatoes on top of the meatloaf cupcakes. Sprinkle with bacon crumbles, chopped chives, potato toppers and Beazell's Cajun Seasoning as desired.
