Chef Amy's Mammaw Goodnight's Sheath Cake

Cake:
2 cups sifted all-purpose flour
2 cups sugar
3-4 tablespoons cocoa
1 cup water
1 stick unsalted butter
1/2 cup shortening
1 teaspoon baking soda
1/2 cup buttermilk
2 beaten eggs
1 teaspoon cinnamon
1 teaspoon vanilla extract

Icing:
3-4 tablespoons cocoa
6 tablespoons whole milk (or 1/3 cup plus one tablespoon)
1 stick unsalted butter
4 cups powdered sugar
1 teaspoon vanilla extract
1/2 to 1 cup chopped pecans or walnuts

Preheat oven to 350 degrees.

For the cake - combine flour and sugar in a large bowl. In a saucepan, combine cocoa, water, butter and shortening; bring to a rapid boil. Add this to the flour mixture. Dissolve baking soda in buttermilk; add with eggs, cinnamon and vanilla to the batter. Mix well. Pour into a greased, floured 13 X 9 X2 pan. Bake for 20 minutes or until a toothpick stuck in the center comes out clean.

For the icing - Bring cocoa, milk and butter to a boil in a saucepan. Add sugar and vanilla and mix well. Add the nuts and spread on hot cake when removed from the oven.
