Amy and Beazell's Chicken Wrap (ABC Wrap)  




1 pound chicken breast tenderloins

4 large Portobello mushrooms

1 package spring mix lettuce

1 to 2 large tomatoes

1 package spinach tortilla wraps

1 to 2 tablespoons Beazell's Cajun Seasoning

Extra virgin olive oil



OPTIONAL – spicy sprouts, grilled red onions, cheese and/or condiments such as chipotle mayonnaise, honey Dijon, salad dressing and lime jalapeno vinaigrette.

Liberally season the chicken tenderloins with Beazell’s Cajun Seasoning. Grill either in a grill pan or on the outdoor grill until cooked thoroughly. Set aside chicken. Grill Portobello mushrooms that have been drizzled with olive oil and Beazell’s Cajun Seasoning on both sides. Slice grilled Portobello mushrooms into 1/2 inch slices.

To assemble – top the tortilla with spring mix, tomatoes, mushrooms and chicken as well as any of the optional ingredients. Wrap the tortilla and slice into half before serving. Wraps hold up well wrapped in parchment paper, waxed paper or aluminum foil.
