Sausage Spaghetti by Mr. Beaz

1 lb. Smoked Sausage, sliced
½ cup Seasoning Blend (Trinity)
1 ½ tsp. minced garlic
1 – 8 oz. can tomato sauce
1 – 15 oz. can petite diced tomatoes
1 tsp. Beazell's Cajun Seasoning
¼ tsp. Basil or equivalent in fresh
¼ tsp. Thyme or equivalent in fresh
¼ tsp. Rosemary or equivalent in fresh
¼ tsp. Parsley or equivalent in fresh
8 oz. water
1 – 2 tsp. sugar
Pasta – cooked according to package directions.
Optional - Fresh Parmesan, grated

In a heavy bottom pot, over medium heat, brown 1 lb. of smoked sausage with the seasoning blend. When everything is nice and brown, add the minced garlic. Stir well. Add the tomato sauce and petite diced tomatoes while scraping the bottom of the pot to get all the browned bits loose. Add the Beazell's Cajun Seasoning, Basil, Thyme, Rosemary, Parsley and Water. Stir well. Add up to 2 teaspoons of sugar to cut the acidity of the tomato sauce. Stir. Allow to cook uncovered on medium-low heat for approximately 30 minutes, stirring occasionally so it does not stick. Serve warm over your choice of cooked pasta.
