Broccoli & Cheese Casserole  




1 cup cheddar cheese, shredded

3/4 cup fat free milk

1/2 of 8 oz. package of cream cheese

2 teaspoons onion soup mix

3 cups cooked white rice

2 cups cooked small broccoli florets

3/4 cup crushed cornflakes

2 teaspoons Beazell's Cajun Seasoning



Preheat oven to 375 degrees.

In a large deep skillet combine cheddar cheese, milk, cream cheese and soup mix. Add a sprinkle or two of Beazell’s Cajun Seasoning. While stirring constantly, cook over low heat until all cheese is melted and blended well. Stir in rice, broccoli and remaining Beazell’s Cajun Seasoning. Mix well. Spoon into a baking dish that has been sprayed with nonstick cooking spray. Sprinkle the top with crushed cornflakes. Bake at 375 degrees for 30 minutes until top is golden brown.

You can also brown a pound of ground meat with Beazell’s Cajun Seasoning beforehand and add it to the skillet when you put in your rice and broccoli. Tastes Great!
