Shrimp Casserole

Shrimp Casserole  




3/4 cup butter

1 onion , finely chopped

1 can cream of onion soup

1 can cream of chicken soup

1 can Rotel tomatoes, with juice

2 tablespoons Beazell's Cajun Seasoning

2 pounds shrimp, peeled and deveined

2 cups rice, uncooked



Heat butter in Dutch oven.  Add onions and cook down until wilted.  Add remaining ingredients and cook for 3 to 5 minutes.  Pour in 9 x 12 casserole dish and bake covered at 350 degrees for 45 – 50 minutes. Uncover and bake an additional 15 minutes. 

You can cover the top of this casserole with Parmesan cheese during the last few minutes of baking in the oven. Makes it ooey gooey!
