Bacon Basket-Weave Meatloaf

Bacon Basket-Weave Meatloaf  




10 slices bacon, uncooked

2 pounds ground beef

Beazell's Cajun Seasoning, to taste

1 (8 ounce) can tomato sauce

2 eggs, whisked

1/4 cup seasoning blend (onions, bell pepper, and celery)

1/2 cup dried parsley

3 tablespoons Italian seasoning

2 teaspoons garlic powder

1 teaspoon lemon pepper

1 cup dry Italian bread crumbs



Preheat oven to 375 degrees.

Weave the uncooked bacon into a blanket and set aside.

Combine all other ingredients and shape into a loaf.  Cover the loaf with the bacon blanket, tucking the ends under.  Place entire loaf in a large casserole.  Bake in the oven for approximately 45 minutes to 1 hour or until the bacon is crispy.  Allow to cool before slicing and serving.
