Beaz's Hassleback Potato Bites

1 lb. tiny yukon potatoes
Olive oil
Beazell's Cajun Seasoning
Cheddar Cheese (or your favorite), shredded
Crumbled Bacon
Non Stick Cooking Spray
Optional: Daisy Sour Cream

Preheat oven to 400 degrees F.

Using a paring knife, make several cuts about 2/3 of the way through each potato and place the potatoes on a greased baking sheet. Brush olive oil over each potato. Bake for 15 minutes. Add cheese and crumbled bacon between the slices. Top each with a pinch of Beazell's Cajun Seasoning. Bake for additional 5 minutes or until potatoes are tender.

Let cool approximately 10 minutes and then top with your favorite loaded baked potato toppings. Add another pinch of Beazell's if needed.

Serve warm or room temp.
