Pickled Mirliton – Contributed by Lisa Dantin  




13 small mirliton - boiled, peeled, seeded and cut into slices (also known as vegetable pears or chayote squash)

1 teaspoon cayenne pepper

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon dill seed

1 teaspoon Beazell's Cajun Seasoning

1/2 teaspoon celery flakes




Boil the vinegar and add to jars stuffed with mirliton & above seasonings; let sit uncovered for about 30 minutes then cover! Flip jars over every day for about 2 weeks; enjoy with beans and rice, or whatever your little heart desires.
