Stuffed roast with onion, bellpeppers and garlic. Sprinkled Beazells all over. Sprinkled Beazells on a cutting board and then laid out a bacon weave and placed stuffed roast on it then flipped it over so the bacon wrapped around the meat. Wrapped it in foil, put in oven on 225 for 5 hrs, then 275 for 90 mins, then 350 for the last hr. - opened foil so bacon could crisp. Used pan drippings to make gravy.
