Spicy Cajun Shrimp w/ Sun Dried Tomatoes by Trudy Landry

1 lb pasta of your choice
1 smaller container mushrooms (diced small)
2 cloves garlic (minced)
1/2 pint of heavy whipping cream
1- 5 oz container grated asiago cheese
1 jar Classico sundried tomato sauce
1 lb shrimp
1/2 cup chopped green onions
Beazell's Cajun Seasoning to taste
Extra virgin olive oil

Sautee mushrooms and garlic in olive oil until mushrooms are soft, add shrimp, cook for about a minute or two, add heavy cream, cheese and sauce, cook on low until cheese is melted, add remaining ingredients and simmer on low for 20 minutes. I like to toss the pasta together with the sauce and let it sit for about 5 minutes to let the sauce thicken up, but it's up to you. Enjoy!
