Grandma's Goulash – Contributed by Amy A. Sosa  




1 pound ground beef, browned and drained

1 medium onion, chopped

1 cup seasoning blend (onions, celery, and bell peppers)

1 (14.5-ounce) can petite diced tomatoes with juice

2 cups spicy V8 juice

1 cup water

Beef stock or beef bouillon

Beazell's Cajun Seasoning, to taste

Salt, to taste


Garlic powder

Chili powder

Dry mustard

Red pepper flakes

3 cups uncooked elbow macaroni noodles

Optional - 12 ounces Beer (your choice and I know Grandma Brown wouldn't have added this but what the heck!)



Brown your ground beef, drain the grease and return to a large pot. Add the onion and seasoning blend and sauté until the onions are translucent. To this add the canned tomatoes with juice, V8, stock or bouillon, water, Beazell's Cajun Seasoning, salt, oregano, garlic, chili powder, dry mustard and red pepper flakes. I didn't measure, just added to taste of my preference. Simmer for about 45 minutes covered. Add the beer if you are going to include it and the pasta. Additional water may be added as needed. Continue to simmer covered until the pasta is tender and serve. Great with cornbread or fresh rolls.
