Cajun Dirty Rice by David Triche

2 (16 oz.) containers Chicken Livers
1 large Onion, chopped
2 bunches Green Onions, chopped
6 toes Garlic, chopped
6 cups "cooked" Rice
2 tsp. BeaZell's Cajun Seasoning
1/2 tsp. Cayenne Pepper
Vegetable Oil

In a pot, boil livers for 30 minutes. Drain ald let cool.
Once cooled, chop and set aside.

In a large pot, put just enough vegetable oil to cover the bottom of pot. Heat oil and add onion, green onions and garlic and saute until soft, about 15 minutes. Add chicken livers and cook on medium-low fire for 20 minutes. Add cooked rice, cajun seasoning and cayenne pepper and stir until well blended. Enjoy!
