Cajun Green Beans by David Triche

Cajun Green Beans - Contributed by David Triche  




1/2 stick butter

1 large onion , chopped

1 (8-ounce) package fresh mushrooms, sliced thin

3 (14.5-ounce) cans green beans, drained

1 (14.5-ounce) can chicken broth

1 (10 1/2-ounce) can cream of mushroom, soup

1 (28-ounce) can French fried onions

1 teaspoon Beazell's Cajun Seasoning

1 cup finely grated sharp cheddar cheese, or more



Preheat oven to 350 degrees.

Melt butter in a large skillet. Add the onions and mushrooms and sauté until soft, approximately 20 minutes on medium heat, stirring often. In a pot, add green beans and chicken broth and bring to a slow boil. Reduce heat to a simmering boil and cook for 20 minutes. Add the green beans, mushroom soup, onion rings and Cajun seasoning to the onion mixture and stir well. Pour into a greased baking dish. Bake for 30 minutes (uncovered). Remove from oven and sprinkle cheese on top. Place back into oven and bake until cheese is melted.
