Bacon Cheese Stuffed Mushrooms by Will Smith

1/2 cup Trinity seasoning (onions, bell peppers, celery)
1 tube Jimmy Dean sausage
1 can Rotel
1/2 lb. Velveeta Jalapeno cheese
Beazell's Seasoning
1 container Whole Fresh Mushrooms
1/2 - 1 lb. Bacon

Wash and cut the stems out of the mushrooms.

Put the trinity in a pot and cook it down, then add the sausage.
Cook it till brown, add rotel and cheese cook till cheese melts in. Add a few sprinkles of Beazell's Cajun Seasoning.

Let stand till hardens up some and stuff the mushrooms, wrap in bacon, cook at 350 deg or on the pit till bacon is crispy and devour!!! OPTIONAL - pour a little Tiger Sauce on each one before cooking!

This is the first time I've done this and 7 people are begging me to cook them from now on!!! Its that good!!!
