MawMaw Grow's Chocolate Peanut Butter Fudge  




6 cups sugar

1 stick Parkay margarine

12 ounces evaporated milk

6 tablespoons cocoa

1 cap, vanilla extract

9 ounces peanut butter



Never attempt this on a rainy or cloudy day!

Over medium to medium-high heat, in a heavy bottomed large pot, add the sugar and cocoa.  Whisk really well to blend.  Add evaporated milk and margarine.  Cook until soft ball setting on a candy thermometer. (Or do it the old fashioned way and drop bits of the fudge in a cup of cold water and see if you can form a little ball out of it with your fingers. Take off heat.

Add vanilla and creamy peanut butter. Mix well, pour in greased cookie sheets or aluminum pans.  Allow to set up for a few hours.
