Beef Tips or Round Steak w/ Rice N Gravy

Beef Tips or Round Steak with Rice and Gravy  




1 - 2 pounds beef tips or 2 pounds round steak, cut into pieces

2 teaspoons Beazell's Cajun Seasoning

2-3 tablespoons all-purpose flour

1 tablespoon olive oil

1 tablespoon butter

1 1/2 cups Trinity blend (onions, bell peppers, celery)

1 clove garlic, minced

2 cups beef stock

Salt, to taste



Season the beef tips in Beazell's Cajun Seasoning, then dredge in flour until coated. Shake off the excess flour.

Heat the olive oil and butter in a large skillet or Dutch oven over medium-high heat. Cook the tips until browned on each side, about 5 - 7 minutes per side. Remove from the skillet and set aside. Add the Trinity, garlic and Beazell's Cajun Seasoning to the skillet; cook and stir until onion is tender, about 5 minutes. Return the beef tips to the skillet and pour in the beef stock. Stir, scraping the bottom of the pan, until all of the browned bits have mixed in with the liquid. Cover and simmer over low heat until very tender, about 1 1/2 to 2 hours. During this time, stir often and add water to keep the tips completely covered. Taste gravy and adjust to your taste with salt or Beazell's Cajun Seasoning.  Serve over warm rice.
