Cheesy Shrimp & Rice Casserole

Cheesy Shrimp & Rice Casserole  




1 cup brown or white rice, cooked

2 cups water

2 pounds medium shrimp, peeled & deveined, cooked (instructions below)

Beazell's Cajun Seasoning, to taste

1 tablespoon olive oil, (for pan frying the shrimp)

6 ounces light pasteurized processed cheese spread

1/2 cup skim milk

Bread Crumbs



Preheat oven to 350 degrees.

Sprinkle your shrimp with Beazell's Cajun Seasoning and toss in a skillet with 1 Tbsp. Olive Oil. Pan fry on medium for 5 – 6 minutes or until shrimp are pink and cooked through.

Combine cooked shrimp and cooked rice. Heat cheese and milk together in microwave or in small pan over medium-low heat until melted, mix with rice mixture. Add Beazell's Cajun Seasoning to taste.

Transfer to 2-quart casserole dish, sprinkle with bread crumbs, bake 15 minutes or until well heated.
