Shrimp Parmesan

Shrimp Parmesan- Contributed by Michelle Alcina  




3 pounds shrimp (16-20 count)


2 cups all-purpose flour

6 eggs

2 cups plain bread crumbs

1 cup grated parmesan cheese

3 cups shredded mozzarella cheese

Beazell's Cajun Seasoning, to taste




Shrimp should be completely peeled. Skewer 6-7 shrimp, using two skewers: one skewer in the front, another going through the rear of the shrimp near the tail. Shrimp should be "stacked" and touching. We made 7 shrimp "planks".

Mix the bread crumbs and the parmesan cheese.

Dredge through the flour on both sides. Dip in whisked eggs, then dredge through the bread crumb mixture.

Heat olive oil in a skillet. Place the shrimp planks in the skillet and fry for 1 1/2 to 2 minutes on each side. Place on cookie sheet that is covered with foil and then parchment paper. Lightly dust with Beazell's Cajun Seasoning and then add the shredded mozzarella cheese.

Place in pre-heated 400 degree oven for 4-5 minutes MAX, until the cheese is melted.

Serve with spaghetti and marinara sauce.
