Barb's Peanut or Pecan Brittle

Barb's Microwaveable Peanut or Pecan Brittle  

1 cup sugar

½ cup white Karo syrup

1 cup peanuts or pecans

1 teaspoon butter

1 teaspoon vanilla

1 teaspoon baking soda

In a 1 1/2 qt. Glass Pyrex Bowl, add sugar and white Karo syrup. Microwave on high for 3 - 4 minutes. Stir in peanuts or pecans. Microwave on high for 2 - 3 minutes until light golden brown; DO NOT SCORCH your pecans. Add butter and vanilla. Mix well. Microwave on high 1 1/2 minutes. Add baking soda. Stir until light and foamy. Pour mixture on lightly greased cookie sheet and allow to cool for 1 hour.
