Amy's Baked Pork Chop Special – Contributed by Amy A. Sosa  




4-6 thin cut pork chops

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium red or yellow onion, sliced

1 large tomato, sliced 1/2 inch thickness

8-10 large fresh basil leaves

Lemon or Beazell's Cajun Seasoning, to taste



Preheat oven to 375 degrees.

Season pork chops with Beazell’s Cajun Seasoning.  Place in a lightly sprayed 13 x 9 baking dish.  Top with slices of bell peppers, onions, basil leaves and top with tomatoes.  Sprinkle more Beazell’s Cajun Seasoning over the top.

Cover with aluminum foil and bake for approximately 25 – 35 minutes or until pork is fully cooked through.

Serve immediately.

This goes well with mashed potatoes or rice topped with “gravy” made from the drippings.
