Cajun Boiled Peanuts by David Triche

Cajun Boiled Peanuts - Contributed by David Triche  




5-6 pounds green peanuts

2 large onions, chopped

1 head garlic, chopped

1/2 cup Beazell's Cajun Seasoning

1/2 cup garlic powder

1/2 cup onion powder

3/4 cup sugar

3/4 cup salt

1/2 cup dry crab boil

1 tablespoon cayenne pepper

3 tablespoons crushed red peppers




Rinse peanuts to get rid of any dirt. Place peanuts in a large pot. Cover with water, about 4 inches above peanuts. Stir in remaining ingredients and bring to a boil. Reduce heat and simmer for about 4 hours (checking at 2 hours if peanuts are very fresh), adding water as needed to keep peanuts covered. If additional water is added, bring back up to a boil, then reduce heat back to a simmer. Taste one for texture and flavor and continue cooking, as needed, checking in 30 minute increments until they reach your desired texture.

Transfer to a covered container with the liquid and refrigerate for 2 to 3 days; warm in the microwave. Will not keep longer than a few days; however, they can be processed and canned, or frozen.
