Corn Fritters  




1 cup all-purpose flour

1 teaspoon Beazell's Cajun Seasoning

1 teaspoon baking powder

1/2 teaspoon sugar

1 egg, beaten

1 tablespoon vegetable oil

1/2 cup milk

1/4 cup chopped green onion

12 ounces frozen corn, thawed

Vegetable Oil, for frying



Bring oil in a heavy pot to 365 degrees.

In a medium bowl, combine the flour, Beazell's, baking powder and sugar and mix well. In a separate small bowl combine the egg, oil and milk. Once mixed, pour the wet mixture into the dry mixture and stir to make the fritter batter. Add in the corn and green onion and mix thoroughly.

Using one of a couple of spoons, scoop up some of the fritter batter and carefully drop it into the hot oil; using the second spoon, slightly press to flatten them. Fry the fritters until golden brown, remove and drain on paper towels. Serve hot!
