Hopped Up Hoppin' John  




1 tablespoon vegetable oil

1 cup white rice

1 link Andouille sausage (or other smoked sausage you have on hand and cut into slices)

1 cup seasoning blend (onion, bell pepper, celery)

1 cup petite diced tomatoes with green chili

2 cups water

1-1/2 cups field peas, with snaps

2 tablespoons Lemon Beazell's Cajun Seasoning

1/2 teaspoon salt



Heat oil over medium heat and lightly brown rice in the oil. Add sausage, seasoning blend, tomatoes with chilies, water, field peas, Lemon Beazell's Cajun Seasoning, water, and salt. Cook over low heat until rice has absorbed the liquid and check your seasoning. Add additional Beazell's as needed to your taste.
