Beazell's Bacon Eggs Benedict

4 slices of cooked Beazell's Bacon (Recipe Below)
1 English muffin, split and toasted
1 large egg, poached
Hollandaise Sauce (Recipe Below)
Sprinkle of Beazell's Cajun Seasoning
Cook bacon as instructed. Eat one slice of bacon now! Lol Place 2 pieces of bacon on top of your toasted muffin half. Top with poached egg, drizzle Hollandaise Sauce on top and sprinkle with Beazell's Cajun Seasoning.
Beazell's Baked Bacon
Place the bacon on parchment paper lined baking pans. Sprinkle with Beazell's Cajun Seasoning! Cook at 375 until your desired crispness. I like my bacon crisp so I bake it for almost 15-20 minutes!
Hollandaise Sauce
2 large egg yolks
1 Tbsp. fresh lemon juice
1/2 cup unsalted butter, melted
1/4 tsp. Beazell's Cajun Seasoning
Whisk the yolks in the top of a double boiler. While whisking, add lemon juice very gradually and continue whisking. Place it over hot water, but do not allow it to boil. Add butter a little at a time, and continue whisking until smooth. Whisk in the Beazell's Cajun Seasoning. Continue whisking until it has thickened up, about 10 minutes.
