Barb's Butterbeans & Bacon  




3  thick-cut bacon slices, chopped

1 small onion, diced

2 cloves garlic, minced

1/2 cup bell pepper, chopped

32 ounces chicken broth

4 cups fresh butterbeans

1 teaspoon Worcestershire sauce

2 teaspoons Beazell's Cajun Seasoning



Cook your bacon in a heavy pot or black iron pot over medium heat and stir it often. About 5 – 10 minutes until it is nice and crisp. Drain it well on paper towels. Keep your bacon fat in the skillet and add your onion and garlic until the onion is starting to get tender. About 3 – 5 minutes...tops. Add your bell pepper, continue cooking and stirring for about another 5 minutes. Add the chicken broth and butterbeans; bring to a boil. Cover, reduce the heat to simmer and let cook about 30 minutes. Stir occasionally during this time. Uncover and continue to simmer for another 15 minutes; stirring often. Add your Worcestershire sauce and Beazell's Cajun Seasoning and cook another 15 minutes. You can either stir in your cooked bacon or top your serving once it's on your plate.
