Day-After Turkey Salad

Day-After Turkey Salad  




3 cups diced turkey breast meat

1/2 cup craisins (rehydrated by soaking in hot water and drained)

1/4 cup chopped pecans or walnuts

1/2 cup celery, chopped

1/2 cup Granny Smith or red delicious apples or both, chopped

2 teaspoons Beazell's Cajun Seasoning

1/4 teaspoon garlic powder

1/4 teaspoon dried mustard

Mayonnaise (just enough to bind the ingredients)



Mix all ingredients with just enough mayonnaise to the desired creamy texture.  Refrigerate at least 2 hours.  Excellent on a sandwich or served on a leaf of Bibb lettuce!
