Smothered Potatoes & Sausage  




2 teaspoons oil

1 pound small new potatoes, halved

1 pound sausage (beef, Andouille, green onion, pork , etc.) – sliced into bite sized pieces

4 green onions, chopped

2 teaspoons garlic, minced

1 teaspoon parsley, chopped

1/2 to 3/4 cup stock or water

Beazell's Cajun Seasoning, to taste



Heat oil in a skillet and add potatoes. Stir frequently to prevent sticking to the pan. Add 3/4 of the onions, all the garlic and parsley and Beazell’s Cajun Seasoning to taste. Simmer until potatoes for approximately 15-20 minutes or until tender. Add the chopped sausage, stock or water and cover to simmer for another 10-15 minutes or more depending on the type of sausage. Add remaining green onions and adjust taste with more Beazell’s Cajun Seasoning as needed. Reduce heat to low and remain cooking until green onions are wilted and sausage and potatoes are cooked through.
