Place the washed beans in a pot with 12 cups of water, bring to a boil, and simmer, covered, for 60-75 minutes or until beans are tender.
When the beans are almost finished cooking, brown the onion, celery, bell pepper, and garlic in a non-stick skillet with 1/2 tsp. olive oil.
Add onion mixture, stewed tomatoes, and lemon juice to the beans, along with your Beazell's Cajun Seasoning and thyme. Simmer 30-45 minutes. Add liquid smoke and salt at the end. Top with a few pieces of raw onion and sprinkle more Beazell's Cajun Seasoning on it to your taste!
