Okra & Ground Beef Stew  




1/4 cup butter

1 pound lean ground beef

1/2 onion, chopped

1/2 cup bell pepper, chopped

2-3 teaspoons Beazell's Cajun Seasoning, or to taste

2 cups diced tomatoes

2 1/2 cups beef broth

1/4 cup tomato paste

3 tablespoons lemon juice

1 pound fresh or frozen okra



Cut all the okra in slices about ¼ to 1 inch thick.

In large saucepan, brown your ground beef in heated butter until cooked. I add a few sprinkles of the measured Beazell's Cajun Seasoning to this as my meat is browning. Add onion, bell pepper and remaining Beazell's Cajun Seasoning. Sauté over medium heat about 4 to 5 minutes longer, cooking down the grease. Stir in the tomatoes, beef broth, tomato paste and lemon juice. Increase heat to bring to a boil. After bringing back to a boil, reduce the heat and cover and simmer about 15 – 20 minutes. Add sliced okra and cover again, simmer for about 30 minutes until okra is tender.
