Crock Pot Red Beans

Crock PotRed Beans  




1 ham bone, with some meat left on it

1/2 pound smoked sausage, sliced

1 pound red beans, soaked overnight and drained

1 cup onion, diced

2 medium cloves garlic, minced

1 celery stalk, diced

2 tablespoons Beazell's Cajun Seasoning

Salt, to taste



Brown sliced smoked sausage beforehand.

In crockpot, add hambone, sausage, beans, onion, garlic, celery, Beazell's Cajun Seasoning and 1 1/2 quarts water. Cover and cook on high 2 hours. Turn heat to low and cook, covered for about 10-12 hours.

Remove ham bone and mash some of the beans against the side of the pot to thicken the remaining liquid. Remove meat from bone and return meat to pot.

Taste and season with salt and additional Beazell's Cajun Seasoning if needed. Serve over cooked rice.
