Fresh Morel Bisque by Steve Besser

1-1/2 lb. fresh morel mushrooms, soaked in water a few hours
1 lb. butter
1 quart heavy cream
1 large vidalia onion diced
one whole head of garlic, cloves diced
4 cups of the water the morels soaked in, add some fresh water if necessary
1/2 tsp. Thyme
2 Tbsp. flour
Beazell's to taste...
 
melt butter in large soup pot and saute onions and garlic on low til translucent...then add HALF the morels and simmer about 5 min....add the flour and mix....then add the water and now use an immersion blender, or pour mixture into a blender and blend smooth, pour back in the pot and add the cream, thyme, remaining morels and simmer till hot....add Beazell's to taste...just dump some in, you can also just add it to your own bowls however you like it...enjoy!
