Dirty Rice Dressing

Dirty Rice Dressing  




3 cups long grain rice

6 1/2 cups low sodium chicken stock

1/2 teaspoon salt

1/2 cup oil

1/2 cup flour

1 cup onion, finely chopped

3/4 cup celery, finely chopped

3/4 cup bell pepper, finely chopped

1 teaspoon garlic, minced

1 cup green onions, chopped

1/2 cup parsley, finely chopped

1 1/2 pounds finely chopped chicken livers

1/2 pound ground beef

1/2 pound ground pork

Beazell's Cajun Seasoning, to taste



Combine rice, salt and 6 cups of stock and bring to a boil. Reduce heat to low, cover and cook for about 15 minutes.

In a Dutch oven, make a brown roux with oil and flour. Add the onions, celery, bell pepper, garlic, 3/4 of the green onions, parsley, chicken livers, beef, pork and cook for approximately 5-10 minutes of medium heat, constantly stirring. Add the remaining 1/2 cup of stock and Beazell’s Cajun Seasoning cook for an addition 15-20 minutes. Remove the mixture from the heat, skim excess fat and combine with the cooked rice, remaining green onions and adjust seasoning to taste with additional Beazell’s. Warm in a 350 degree oven covered for 20 minutes and serve.
