Crock Pot Curried Lemon Chicken Divan Casserole  

 

Ingredients

 

1 medium onion , chopped

3 small stalks celery, chopped (with leaves)

3 large chicken breasts, (approximately 1 1/2 lb. chicken)

2 cups chicken stock

2 cups heavy whipping cream

1 teaspoon curry powder

1 teaspoon dry mustard

1 teaspoon crushed garlic

Lemon Beazell's Cajun Seasoning

1 large lemon, 1/2 inch thick slices

1 1/2 cups basmati rice, uncooked (or 4 cups cooked rice)

2 cups frozen broccoli florets

1 cup shredded sharp cheddar cheese

1 cup fried onions, for the topping

 

Directions

To crock pot add onion, celery, chicken breasts, chicken stock and whipping cream seasoned with curry, dry mustard, garlic, Lemon Beazell’s Cajun Seasoning and lemon. Set on high and cook for 3 - 5 hours. Turn crock pot to low and add the rice and broccoli. After 30 to 40 minutes or until rice is cooked, turn crock pot to warm and top with cheese and fried onions. Let set on warm for 30-25 minutes and then serve.
