Mrs. Beazell's Cheeseburger Meatloaf

4 lbs. of Lean Ground meat
1 onion soup packet
1 1/2 cups bread crumbs
3 large eggs
1/4 cup Beazell's Cajun Seasoning
2 Tbsp. Worcestershire sauce
2 cups Mexican Blend Cheese, shredded (Monterey Jack, Cheddar, Asadero & Queso quesadilla cheeses)
3 cups cheddar cheese, cubed
(These are your loaves and you can substitute any cheese you want.)
 
This recipe will make 2 – 2 lb. loaves.
 
Preheat oven to 350 degrees.
 
Put ground meat in a large bowl. Crush your onion soup mix while it is still in the packet and then add it to the bowl. Add your bread crumbs, eggs, Worcestershire Sauce, shredded cheese (your choice) and Beazell's Cajun Seasoning. Mix well and form into two loaves. With a knife, cut a loaf in half and place 1 1/2 cups cubed cheese (your choice) inside of the loaf and form the two sides back together. Do this with the other loaf. Sprinkle Beazell's Cajun Seasoning on top of each loaf. Bake for 80 – 90 minutes uncovered. Every 30 minutes, baste the tops down with the tomato glaze. (Recipe below.)
 
 
Tomato Glaze -
6 oz. can of tomato paste
1/2 tsp. beef broth
1 Tbsp. of grease out of one of the baking pans of loaves or extra virgin olive oil
2 Tbsp. water
1 tsp. brown sugar
Few sprinkles of Beazell's Cajun Seasoning
 
Mix the all ingredients for glaze in a small pot and cook down on the stove until mixture is well blended.
