Pot Stickers

Pot Stickers – Contributed by Mr. Beazell  




Dumpling dough:

2 cups all-purpose flour

1 cup boiling water

1 tablespoon Beazell's Cajun Seasoning



8 ounces cabbage

1/3 cup water

1 pound lean ground pork or ground beef

1 tablespoon Beazell's Cajun Seasoning

1 tablespoon chopped parsley

1 teaspoon minced garlic

1 teaspoon corn starch



2-4 tablespoons vegetable oil

1/2 cup water



Slice cabbage into small strips. Place in a pot with water (1/3 cup) and smother it down until all water is gone. Put aside and let cool.

In a bowl: Mix the ground meat, Beazell’s Cajun Seasoning, parsley, garlic, corn starch and smothered down cabbage.

In a mixer: Mix the flour, the boiling water and Beazell’s Cajun Seasoning until a soft dough forms. Flour a surface and knead the dough for about 5 minutes or until smooth. Divide the dough in half. Take each half and make a roll about 12 inches long and cut each roll into about 1/2 inch slices.

Roll 1 slice of dough into a 3 inch circle and place about a tablespoon of your meat mixture in the middle. Fold over and pinch pleats around the edges to hold in the meat mixture. Do that with all the dough and meat mixture.

In a non-stick skillet, add your vegetable oil. Heat pan well and place dumplings in a single layer in the skillet and fry until the bottoms are golden brown, about 2 minutes. Add 1/2 cup of water. Cover your skillet and allow to cook for about 6 – 7 minutes or until the water is all absorbed. Do this with all the dumplings.

This recipe makes about 36 pot stickers (fat pot stickers).
