Shrimp Fried Rice

Shrimp Fried Rice




1 pound shrimp, peeled & deveined

2 tablespoons extra virgin olive oil

1/2 cup chopped, onion

2 eggs, beaten

2 teaspoons Beazell's Cajun Seasoning

4 cups rice, cooked

3 tablespoons soy sauce

2 teaspoons sesame oil

Optional - 1 cup frozen peas (defrosted) and/or 1 cup red bell pepper



Prepare 4 cups of rice according to directions.

Heat extra virgin olive oil in skillet or wok. Sprinkle shrimp with Beazell's Cajun Seasoning and pan fry until pink. Set aside.

In the skillet or wok, add the onions; sauté 1 – 2 minutes. Add eggs; scramble well. If you're going to add any veggies, put them in now and cook 3 – 5 minutes. Stir in shrimp, Beazell's Cajun Seasoning, your pre-cooked rice, soy sauce and sesame oil. Heat thoroughly and eat.
