Chicken Fried Rice

Chicken Fried Rice  




1-2 cups cooked chicken

2 tablespoons extra virgin olive oil

1/2 cup chopped onion

2 eggs, beaten

1 cup frozen peas

1 cup red bell pepper, diced

2 teaspoons Beazell's Cajun Seasoning

4 cups cooked rice

3 tablespoons soy sauce

2 teaspoons sesame oil



Cut chicken into bite sized pieces. Sprinkle with Beazell's Cajun Seasoning and pan fry with a little olive oil. Set aside.

Prepare 4 cups of rice according to directions.

Heat olive oil in large skillet or wok. Add onions; sauté 1 – 2 minutes. Add eggs; scramble well. Stir in cooked chicken, peas, bell pepper, Beazell's Cajun Seasoning, rice, soy sauce and sesame oil. Heat thoroughly and eat!
