Barb's Baked Potato Casserole  




1 bag cubed hash browns

1 can of cream of mushroom soup

1 (16 ounce) container sour cream

8 ounces shredded cheddar

Beazell's Cajun Seasoning, to taste

Chives & bacon bits



Preheat your oven to 350 degrees. Mix all ingredients except chives and bacon bits. Put in sprayed baking dish. Cook for 35 – 40 minutes. If you're using frozen hash browns, stir the casserole once about half way through the baking. Once you're finished baking, remove cover and add your chives and bacon bits. If you would like to add a little more cheese to the top, do so at this time. Cook an additional 10 minutes with them on top.
