Barb's Cajun Fettuccine

Barb's Cajun Fettuccine  




1 1/2 cups butter

1 medium yellow onion, chopped fine

1 medium bell pepper, chopped fine

2 cloves garlic, chopped fine

Beazell's Cajun Seasoning, to taste

1 pint half and half

1 ounce lemon juice

8 ounces cheddar cheese, shredded

8 ounces Mexican cheese, shredded

1 pound crabmeat

2 pounds shrimp and/or crawfish

1 pound fettuccine noodles

1/4 cup flour



Cook your noodles according to the package.

In a Dutch oven or roaster, melt your butter and sauté your onions, bell pepper and garlic with a few sprinkles of Beazell's Cajun Seasoning. Takes about 15 minutes to wilt these veggies. Stir in your flour to make a blonde roux.

Continue to stir while that cooks and blends for about 5 minutes. Very slowly and while continually stirring, add your half n half, lemon juice and cheeses. Mix well. Add shrimp and/or crawfish and crabmeat. Cook about 20 minutes. Add cooked noodles to mixture. Season with additional Beazell's Cajun Seasoning to taste.
