Mexican Casserole

Beazell's Mexican Casserole  




3-4 pounds ground beef

3 - 4 tablespoons Beazell's Cajun Seasoning, divided

1 tablespoon chili powder

3 teaspoons water

1 bag Doritos, crushed

6 flour tortillas, trimmed to fit in pan

1 (8 ounce) package Mexican cheddar jack cheese, finely shredded

1 (8 ounce) package Colby & Monterey jack cheese, finely shredded

2 (16 ounce) cans refried beans

3 teaspoons water





Sour cream



Cook ground meat; drain fat. Add 2 - 3 Tbsp. of Beazell's Cajun Seasoning and Chili Powder. Add 3 tsp. water to meat mixture. Set aside.

In saucepan, heat Refried Beans with 3 tsp. water and 1 Tbsp. Beazell's Cajun Seasoning. Set aside.

In 9 x 13 deep casserole dish, start by lining the bottom with flour tortillas. Add a layer of refried beans, then crushed Doritos, then ground beef and a blend of both cheeses. Then start again with the flour tortillas, refried beans, crushed Doritos, ground beef and top it off with both cheeses again. You should complete the layers one more time and be at the top of the pan.

Cook at 350 degrees for 20 minutes or until cheese is melted. You can garnish with avocado slices, salsa and sour cream. And if you have a few remaining Doritos left in the bag, put a few on top of your piece of Mexican Casserole.
