Beef and Black Bean Cheesy Burritos  




1 pound lean ground beef

1 small onion, chopped

1 can black beans, drained and rinsed

4 oz. can tomato sauce

2 tablespoons Beazell's Cajun Seasoning

2 teaspoons cumin

1 teaspoon minced garlic

2 teaspoons dried cilantro

1 cup shredded sharp cheddar cheese, for the filling

2 cups shredded sharp cheddar cheese, for the topping

6 flour tortillas

Garnishes – sour cream, cilantro, picante sauce, black olives, queso and avocado



Preheat oven to 350 degrees.

Brown the ground beef and onion.  Drain fat. Add the black beans, tomato sauce, Beazell’s Cajun Seasoning, cumin, garlic and cilantro and bring to a slow simmer until most of the liquid has reduced.  Add the cheese to the mixture for the filling.

Place a large helping of the meat mixture into each flour tortilla, roll into a burrito and place seam side down in a greased casserole dish.  Top with the additional cheese.  Bake the burritos for approximately 12 minutes; or until the cheese is melted on top.

Serve and garnish with the topping of your choice.
