Black Eyed Pea Cabbage Roll Sauce with Bacon  

 

Ingredients

 

1 pound diced bacon

1 small onion, finely chopped

1 small bell pepper, finely chopped

1 (15 ounce) can black-eyed peas, with liquid

1 (14 ounce) can beef broth, low salt

1 (29 ounce) can fire roasted diced tomatoes

 1 - 2 tablespoons Beazell's Cajun Seasoning

 

Directions

Fry bacon down and place to side. Drain all but about 3 – 4 Tbsp. of the fat. Sauté the onion and bell peppers with a sprinkle of the Beazell's Cajun Seasoning until wilted.  Add peas, beef broth, tomatoes and remaining Beazell's Cajun Seasoning.  Cook on low for about 15 minutes to blend flavors.
