Beazell's Stuffed Chicken Breast

6 boneless, skinless chicken breasts
Beazell’s Cajun Seasoning
1/4 cup onions, chopped
1 lb. fresh spinach
3 cloves garlic, minced
6 white button mushrooms, sliced
1/2 cup feta cheese
olive oil
 
Preheat oven to 400 degrees.
 
Pound chicken breasts thin. Lightly saute onions, spinach, mushrooms and garlic in olive oil. Sprinkle Beazell’s Cajun Seasoning on inside of chciken. Add the sauteed vegetable on each chicken breast. Top each with feta cheeese. Rool each chicken breast up and tie with butcher string. Place seem side down in a baking dish. Lightly drizzle olive oil on the outside of the chicken and sprinkle with more Beazell’s Cajun Seasoning. Bake 35 minutes.
