Amanda's Guiso (Pork and Vegetable Soup)

Amanda’s Guiso (Pork and Vegetable Soup)  




6 boneless pork chops, cut into bite sized pieces (chicken can be substituted for the pork)

Beazell's Cajun Seasoning, to taste

3 tablespoons flour

2 tablespoons oil

1 can stewed tomatoes with green chilies

1 can sweet corn

2 zucchini, chopped

2 yellow squash, chopped

3 cups water

1 tablespoon cumin

1 tablespoon dried oregano



In a large bowl, add the cut up pork and toss in the flour and a liberal amount of Beazell’s Cajun Seasoning.  Toss this mixture together to coat the meat.

In a large stock pot, add the oil and bring to a medium heat.  Add the pork and stir regularly to brown the meat.  After the meat is browned, add all the remaining ingredients and cook over low-medium for approximately 45 minutes.  Serve with cornbread or warm flour tortillas.
