Stuffed Jalapenos w/ Bacon by Craig Wilkins

Stuffed Jalapenos with Bacon - Contributed by Craig Wilkins

 

Ingredients

 

24 jalapenos, stemmed and seeded

1 pound boudin

2 pounds center cut bacon

1 cup cheddar or Colby jack cheese, shredded

 

Directions

Remove the casing from the boudin. Heat for 2-3 minutes in the microwave. (This makes working with boudin easier.)

Stuff the jalapenos with the boudin, wrap with bacon and skewer with a toothpick.

If you don't have a pepper rack, you can use 3 toothpicks stuck in the bottom of the jalapeno to make a tripod of sorts so they will stand up on a cookie sheet.

Once upright on the cookie sheet, sprinkle with cheese and lightly dust with Beazell's Cajun Seasoning.

Place the cookie sheet in a pre-heated 350 degree oven for 30-35 minutes. Remove, allow to cool and they are ready to enjoy!
